Recipe for Turkey BBQ Gobblers

I brought a dish to the pot-luck luncheon for Matt and Erin, and was asked by several people for the recipe. I thought it would be easiest to print it for everybody and anybody who might like it.

Turkey BBQ Gobblers

I wish I could take credit for coming up with this idea, but it came from an entry to the North Carolina Turkey festival.

1 pound ground turkey
1 teaspoon oil
1/4 cup diced onion
1/2 cup barbecue sauce
2 tablespoons brown sugar
2 cans (7 1/2-ounce each) refrigerated biscuits (20 total)
1 1/2 cups shredded cheddar (I used 50% reduced fat cheddar)
Brown turkey in oil, add onion and saute until tender. Add barbecue sauce and brown sugar, then mix well.
Place biscuits one at a time in a muffin pan, and flatten in the middle, pressing up the sides.
Fill each 3/4 full with meat mixture, continue until all the biscuits are in the muffin pan. Make sure the meat mixture does not touch the sides of the pan. Top with shredded cheese, Bake at 400 degrees for 10-15 minutes.
